Fall Veggies: A Rainbow of Variety

Each season produces a variety of fruits and vegetables; fall is no exception. During the fall season, the variety of colorful vegetables is abundant. You can find, at the grocer and your local farmers market, a selection of vegetables in hues of : orange, yellow, green, red, and white.

Certainly, some fall vegetables are available at other times of the year, but theyCauliflower are at their freshest during the fall season (squash, broccoli, spinach, brussel sprouts, cabbage, cauliflower, greens).

Squash is one fall vegetable available in colorful varieties that can be used in stews, casseroles, pies, side dishes. The varieties available are as diverse as their colors and shapes: Acorn, Ambercup, Autumn Cup, Banana, Butternut, Buttercup, Carnival, Delicata, Fairytale Pumpkin, Gold Nugget, Hubbard, Spaghetti, Sweet Dumpling, Turban.

Butternut squashButternut squash is one of my favorite squash. I prefer using this squash, over pumpkin, for baking my pies. It tastes a lot like pumpkin and sweet potato.

 

With so many varieties of fall vegetables available, you’re sure to find a few that you like, as well.
